Healthy Fluffy Blueberry Pancakes

When you picture pancakes, most people see a stack with a big scoop of ice-cream, dollop of cream and lashings of golden syrup. All very sugary and not very healthy. It is quite easy to make a healthy pancake stack that’s just as delicious as the naughty stuff.

INGREDIENTS

  • 1 cup self-raising flour (use spelt flour or organic flour)
  • 1 cup milk (preferrably skim, soy or organic milk)
  • 1 egg (organic if you have it)
  • 1 tsp equivalent of stevia (instead of sugar)
  • 1/2 tsp bi-carb soda for extra fluffiness
  • 1 punnet of blueberries
  • Maple Syrup to serve
  • Rice Bran Oil for frying

METHOD

  1. Using a beater or stand mixer (like a KitchenAid), whip the egg until fluffy
  2. Add the flour, milk, stevia & bi-carb and mix until fluffy. Add extra milk if necessary to achieve the right consistency.
  3. Lightly oil a frying pan with Rice Bran Oil (instead of butter – use a good fat). Rice Bran Oil has a high burning temperature and a mild taste and is perfect for frying all manner of things.
  4. Spoon mixture into frying pan. Drop 6-8 blueberries on to the mixture.
  5. As the mixture bubbles and the bubbles pop, flip over to cook on the other side.
  6. Serve hot in a stack with Maple Syrup.

Spelt flour is good for the immune system, blueberries are full of anti-oxidants. Stevia is a natural sweetener to use in place of sugar. It’s a little pricey but well worth it and is only used in small doses. This looks like an indulgent treat, but it’s actually quite good for you!
